intermission: Swedish Mustard

Mustard is an important condiment in Sweden and it differs from English or French mustard.  This recipe is for a rather typical mustard from south of Sweden and it is my choice of mustard.

Swedish sweet and strong mustard

1/4 cup Brown mustard seeds

1/4 cup Yellow mustard seeds

3/4 cup Water

1 tbsp Vinegar

2 tbsp Sugar or honey if you eat that, never tried it with agave but maybe that could work too.

¼ cup Canola oil

1 tsp salt

In a pot bring the mustard seeds and water to a boil and remove from heat.

Pour in to a food processor and process for 3-5 minutes until the yellow seeds have turned creamy and the brown ones is in small pieces. Add the rest of the ingredients and blend creamy.
