8 November: “chicken” in curry sauce

This is a typical dish you get in the school diner. All kids hate it, mostly because the chicken is overcooked and gray and the sauce is bland. But if you switch to a vegan option and make the sauce yourself you get a very tasty meal out of something so easy to make. I like my sauce a bit on the spicy side. My father refused to eat this since he hates curry powder and he thinks rice looks like ants egg…he’s got a point.

“chicken” in curry sauce

200 gr vegan chicken bits or strips

1 small apple, diced
1 small onion, about the same size as the apple, diced
2 tbsp curry powder, more or less depending on how hot you want it
2 tbsp margarine
1 tbsp flour
1 cup vegetable or vegan chicken flavor broth
1/3 soy milk or sou cream

Fry the “chicken” in oil until they get some color.
In a sauce fry the onion, apple and curry powder in the margarine for a few minutes.
Add the flour and let it brown just a bit.
Pour in the broth and let it heat up and slowly boil for 5 minutes.
Whisk in soy milk/cream and add salt if needed.

Serve over rice and with a green salad.

  1. Did you just read my mind? I was thinking about this very dish two days ago, and remembered how much I hated it. Yours seems really good though, maybe I can finally come over my hate for it?
