Board steak, plankstek, is not really traditional Swedish cooking but it has become a very special dish in a short time in Sweden. It originate from Hungary but in this form it is very Swedish, normally you have it at road dinners or cheap restaurant. During the 70’es it was the most popular dish to have at couples dinner. We use the recipe from Urban Vegan for our Vegan Bearnaise.
1 seitan cutlet each
1 tomato each
50 gr string beans per person
a wood board, or wood cutting board, per person soaked in water for 30 min
Boil the string beans until soft and tender, I like mine not to soft. Turn the oven to 250C. slice a cross pattern on each tomato and bake them in the oven until they start to brown on the top. Brown the cutlets and put them in the center of you wood board. Stuff the mashed potato into a pastry bag and pipe around the steak in a form you like. Arrange the tomato and string beans on one side of the steak. Bake the whole thing in the oven until the potato start to brown. Pour over your vegan Bearnaise and serve.
